Mad Brewing and La Pirata deliver a sophisticated Old Ale enriched by the botanical depth of Ratafía. This mahogany-hued ale opens with a dense aromatic profile of treacle, dark toffee, and oxidative notes of Sherry. The Ratafía addition layers in complex nuances of green walnut, cinnamon, and a subtle herbal bitters-like quality that complements the rich malt base. On the palate, luscious flavors of raisin, fig, and molasses are balanced by a gentle tannic dryness and a warming alcohol presence. The finish is long and vinous, highlighting the synergy between traditional English brewing and Mediterranean liqueur craftsmanship.
Appearance. Deep mahogany to dark reddish-brown (approx. 20 SRM). Moderate light-tan head with average retention and fine lacing. Clarity is mostly clear, though a slight age-related haze may be present.
Aroma. High intensity. Prominent malty-sweet aromas of molasses, toffee, and dark caramel. Strong fruity esters of raisin and plum. The Ratafía contributes distinctive notes of green walnut, clove, and cinnamon, alongside a vinous, Sherry-like oxidation. No hop aroma.
Taste. Initial impression is malty and rich. Deep flavors of dark fruit, nuttiness, and treacle. Ratafía provides a unique botanical complexity with hints of anise and medicinal herbs. Hop bitterness is moderate but serves to balance the residual sweetness. Finish is somewhat sweet and lingering, with a pleasant, aged vinous character.
Mouthfeel. Medium-full, chewy body with a smooth, velvety texture. Carbonation is moderate. Alcohol warmth is noticeable and well-integrated. A light tannic astringency from the Ratafía maceration adds structure.
