This Specialty Cider presents a sophisticated fusion of traditional orcharding and modern craft brewing techniques. Fermented with Bella Saison yeast, the cider bridges the gap between a crisp, tart apple base and the rustic, spicy complexity of a Belgian ale. The generous dry-hop addition of Mosaic and Citra elevates the aromatic profile with vibrant layers of mango, blueberry, and zesty citrus, which harmonize beautifully with yeast-driven notes of cracked pepper and earthy spice. On the palate, its off-dry character allows the natural acidity of the apples to shine, while the tropical hops provide a refreshing, nuanced finish that transcends typical cider expectations.

Appearance. Pale straw to light gold with a slight haze from the dry-hopping process. Pours with a delicate, bright white head that dissipates relatively quickly to a fine rim of lacing.
