This collaborative Straight Sour Beer presents a vibrant, refreshing profile defined by its high drinkability and complex fruit character. It opens with a sharp, clean lactic acidity that drives the sensory experience, balanced by a delicate backdrop of crackery and biscuity pale malts. Aromas of lemon zest and tart apple are layered with moderate fruity esters reminiscent of apricot and white peach. Appearance. Very pale straw color (2-3 SRM). Clarity is brilliant to slightly hazy. Features a large, dense white head with low retention and lively effervescence.

Aroma. High intensity of clean, sharp lactic sourness. Dominant fruity character of lemon, tart green apple, and subtle stone fruit like peach. Pale malt presents as light biscuit or saltine cracker. No hop aroma or fermentation byproducts.

Taste. Strong, clean lactic sourness is the primary impression. Low grainy and bready malt flavors provide a brief support before the acidity takes over. No perceived hop bitterness or flavor. Displays a complex fruitiness of citrus and pome fruit. Finishes very dry and crisp with a lingering lemony tang.
