This Double Barrel Imperial Stout offers a profound sensory journey, defined by an extraordinary thirty-six-month aging process. The initial sixteen months in bourbon barrels impart classic notes of charred oak and caramel, followed by twenty months in triticale whiskey barrels that introduce a unique, spicy grain complexity. Infusions of fresh vanilla beans smooth the intense alcohol presence, layering rich, creamy sweetness over a bedrock of dark chocolate and espresso-like roasted malts. Expect a viscous, midnight-black pour with aromas of molasses and dried figs, culminating in a velvety, warming finish that balances decadent sweetness with lingering roasted bitterness and spirit-forward complexity.
Appearance. Jet black and opaque (40+ SRM). A thin, dark tan head forms briefly but dissipates quickly due to the high alcohol content, leaving thick, oily legs on the glass.
Aroma. High intensity and deeply complex. Dominant aromas of rich vanilla, toasted oak, and bourbon-soaked dark chocolate. Secondary notes of spicy triticale whiskey, black licorice, and dark fruits like prunes and raisins. Alcohol is prominent but well-integrated, smelling of sweet liqueur rather than solvent.
Taste. Intense flavors of bittersweet chocolate, heavy roast, and espresso.
