The wild fermentation provides a complex backdrop of bright lactic acidity and subtle funk, which cuts through the fruit’s natural richness. Appearance. Deep, opaque purple-magenta with a saturated violet-tinted head. Retention is moderate to low, common for high-acidity wild ales, leaving a thin collar and minimal lacing.
Aroma. High intensity aromatics of jammy blackberry and tart boysenberry dominate. Beneath the fruit lies a sharp, clean lactic sourness and a faint earthy funk from the wild fermentation. No significant hop aroma or malt character is present, allowing the blue raspberry and dark berry notes to shine.
Taste. Initial impression is a burst of tart, juicy fruit. Tangy blackberry and rich boysenberry flavors are prominent, followed by a nostalgic, sweet-tart blue raspberry note. The fermentation provides a firm but balanced acidity. Bitterness is very low, and the finish is dry with a lingering essence of berry skins and a refreshing, puckering tartness.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. There is a slight tannic astringency from the berry additions, contributing to a dry mouthfeel. Alcohol warmth is minimal and well-integrated despite the 7% ABV.
