This Soft Pilsner reimagines the German Pils through the lens of modern hop techniques, prioritizing a lush aromatic profile over sharp bitterness. Hallertau Mittelfruh, Saaz, and Tettnanger hops deliver high-intensity floral and herbal spice, reminiscent of a hazy IPA's vibrance but with traditional continental elegance. The inclusion of raw pearled barley, prepared via cereal mashing, imparts a smooth, rounded malt character that softens the mid-palate without adding cloying sweetness. The result is a refined lager that balances a doughy, cracker-like malt base with a saturated noble hop presence, finishing with a clean, approachable crispness and a uniquely supple texture.
Appearance. Straw to deep yellow (SRM 3); brilliant clarity with a creamy, long-lasting white head that leaves delicate lacing on the glass.
Aroma. High intensity noble hop character featuring prominent flowery, spicy, and herbal notes. Supporting this is a moderate grainy, doughy malt sweetness with a light honey and toasted cracker quality. Extremely clean fermentation profile with no esters or sulfur.
Taste. Initial impression is a soft, doughy malt sweetness from the pearled barley, which is quickly joined by assertive floral and spicy hop flavors. Bitterness is moderate—lower than a traditional Northern German example—providing enough structure to balance the malt without becoming sharp. Finishes clean and crisp with a lingering herbal hop note and a smooth, grainy aftertaste.
Mouthfeel. Medium-light body with a distinctive softness and light creaminess attributed to the cereal-mashed barley. Moderate to high carbonation provides a refreshing prickle on the tongue. Smooth finish with no astringency or alcohol warmth.

In place of oats and wheat, we used raw, pearled barley with no husk and cereal mashed that before adding it to the mash. It was a pain in the ass but we love the result!
