This Munich Dunkel presents a refined expression of Central European lager tradition, leaning into its Czech-inspired roots. The use of decocted Bohemian malt yields a profound depth of toasted bread crust and delicate nuttiness, while cold-steeped dark malts provide subtle chocolate undertones without harsh roast. Aromatically, the malt richness is accented by a distinct spicy and herbal lift from concentrated Czech Saaz hops. On the palate, the balance is decidedly malty yet clean, offering a smooth, medium body and a soft, medium-dry finish. It is a highly drinkable, mahogany-hued lager where rich decoction character meets the crisp floral elegance of noble hops.
Appearance. Deep copper to dark mahogany (SRM 17-28) with a clear garnet tint. Topped with a creamy, medium-tan head that displays persistent lacing.
Aroma. Moderate-high malt richness reminiscent of toasted bread crusts and hazelnut, with hints of milk chocolate from the cold-steeped grains. Low but distinct spicy and floral hop aroma from the Czech Saaz. Clean fermentation profile with no esters or diacetyl.
Taste. Initial impression is rich and bready, showcasing the depth of the Bohemian malt. Flavors of toasted crusts, soft caramel, and a touch of cocoa predominate. Bitterness is medium-low, balancing the malt without overtaking it. The finish is medium-dry and clean, leaving a lingering toasted malt aftertaste. Low spicy hop flavor provides a noble counterpoint.
Mouthfeel. Medium body with a smooth, dextrinous texture. Moderate carbonation creates a soft mouthfeel. No alcohol warmth or astringency.

Have you ever had a Vietnamese Coffee? And by that, we mean Vietnamese coffee shaken with sweetened condensed milk? If you haven’t, it would definitely provide an expansion of your palate – they are so bitter yet so sweet and somehow manage to meet in the middle. As brewers, we try to find a balance between hop bitterness and malt sweetness but that middle ground becomes harder and harder to achieve the further away from the center we travel. 

This is the goal of our Semi-dark lager, the Vietnamese coffee of the beer world. Starting gravity was 13.5 plato and terminal gravity was 5 plato leading to an abv of 4.6% with 30 ibus. The brewers out there will cringe at this. It was risky and hard to achieve but we hope that it gives our friends in the states a little glimpse of what makes Czech-style lagers so unique in the beer world. Decocted Bohemian malt, cold-steeped dark malts, and concentrated Czech Saaz hops. This was a very small batch so we can only crank out one case per location at this time.
