Trinity presents a masterclass in the Imperial Stout style, elevated by a full year of maturation in American Bourbon casks. The sensory experience is dominated by an assertive aromatic kick of bourbon and strong woody notes, harmonizing with deep layers of bittersweet Chocolate and Dark Roasted malts. The addition of Oats transforms the texture into a remarkably velvety and rounded profile, buffering the 12% ABV with a luscious, chewy density. Expect a complex interplay of charred oak, vanilla, and dark cocoa, finishing with a lingering, smooth warmth that reflects the patient aging process in Sligo.

Appearance. Jet black and opaque (SRM 40+). Pours with a thick, deep tan head that shows moderate retention. High viscosity is evident as the beer leaves slow-moving legs on the glass.

Aroma. High intensity and complex. Primary notes of bourbon and charred oak lead into a rich base of bittersweet chocolate, espresso-like roast, and black licorice. Moderate esters reminiscent of raisins and dried plums are present, with a distinct but smooth alcohol warmth.

Taste. Intensely flavored with a complex mix of dark roasted malts, cocoa, and heavy bourbon-derived vanilla and wood. The malt profile provides a sweet, bready support for the medium-high bitterness. The mid-palate features the signature smoothness of oats, while the finish is long, warming, and bittersweet with lingering notes of dark chocolate and toasted oak.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant but gentle alcohol warmth is present, well-integrated without being harsh or solventy.
