This imposing Imperial Stout presents a masterful intersection of dark intensity and unique maritime aging. Submerged in the Atlantic, the Clonakilty Irish whiskey barrels have imparted deep notes of toasted oak, vanilla, and honeyed grain that meld seamlessly with the base beer’s roasted core. Expect a robust profile of bittersweet chocolate, espresso, and black licorice, layered with dark fruit esters of prune and dried fig. The twelve-month ocean maturation has softened the high alcohol into a smooth, vinous warmth, creating a velvety and remarkably complex experience where the constant motion of the sea has integrated the charred malt and whiskey-soaked wood characteristics into a harmonious, rich finish.

Appearance. Jet black and opaque (SRM 40+). Topped with a thick, creamy, deep tan head that shows moderate retention and leaves significant legs on the glass due to high viscosity and alcohol content.

Aroma. High intensity. A rich blend of dark chocolate, espresso, and black licorice is augmented by prominent Irish whiskey notes of vanilla, caramel, and spicy oak. Subtle esters of raisin, prune, and fig provide a complex fruit background without sharp alcohol.

Taste. Massive initial flavors of bittersweet cocoa and charred grain. The mid-palate features a smooth whiskey character, adding layers of honeyed malt and toasted wood. Firm bitterness balances the residual sweetness, leading to a long, complex finish of roasted coffee, dark fruit, and a pleasant, lingering warmth.

Mouthfeel. Full-bodied, viscous, and chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant but well-integrated alcohol warmth provides a soothing background sensation without being harsh or solventy.
