This Imperial Stout presents an imposing sensory profile, defined by its maturation in Cognac barrels. The pour is jet black and viscous, releasing a high-intensity aroma where bittersweet chocolate and espresso meet the sophisticated, vinous character of aged brandy. The barrel influence is prominent, contributing notes of toasted oak, dried grape, and a hint of vanilla that intertwines with dark fruit esters like figs and prunes. On the palate, deep roasted malt flavors provide a sturdy foundation for the Cognac’s warmth, balanced by a firm bitterness. Appearance. Jet black and opaque (40+ SRM). Crowned by a dense, deep tan head with moderate retention and significant lacing. High viscosity is apparent through visible legs on the glass.

Aroma. High intensity and complex. Dominant scents of bittersweet chocolate, espresso, and charred grain. Strong secondary notes of Cognac, including dried fruit, oaky vanilla, and brandy-like alcohol. Esters of plum and raisin are noticeable.

Taste. Intense initial impression of dark cocoa and roasted coffee. The mid-palate reveals layers of black currant, fig, and the distinct vinous character of the Cognac barrel. Medium-high bitterness provides balance against the rich malt. The finish is lingering and complex, featuring roasted grain, smooth oak, and warming alcohol.
