Lord Chambray Si-Wol is a sophisticated Saison that harmonizes rustic grains with exotic aromatics. A foundation of crackery pale malt and soft wheat malt creates a smooth, bread-like palate, supporting an expressive Belgian yeast profile of citrus and pome fruit. The inclusion of local Gozitian silla honey imparts a distinct floral elegance, while freshly ground Szechuan pepper adds a layered earthy and spicy contrast. This effervescent ale remains highly attenuated, delivering a crisp, thirst-quenching finish where the peppery tingle and honeyed floral notes linger alongside a refreshing, bone-dry snap.
Appearance. Pale gold (6 SRM). Head: Dense, rocky white head with excellent retention and Belgian lacing. Clarity: Slight haze from wheat malt and yeast suspension.
Aroma. Intensity: Moderate-high. Malt: Soft, grainy, bread-like wheat and crackery notes. Hops: Low, earthy, floral. Yeast: Prominent citrus and pear esters; peppery phenols. Adjuncts: Pronounced floral silla honey and a distinct, earthy Szechuan pepper spice.
