This Medium Cider presents a rustic, heritage-focused profile shaped by estate-grown cider apples and a slow, wild yeast fermentation. The six-month winter maturation imparts a nuanced complexity that evolves through conditioning in Scotch whisky barrels. Expect a harmonious interplay between the inherent tannins of traditional cider apples and the smoky, vanillin notes derived from the oak. The palate finds a refined balance between residual sweetness and a crisp acidity, with the whisky influence providing a sophisticated, lingering warmth. It is a traditional expression where the rich fruit remains central, supported by a subtle wild fermentation character and the distinct, peaty breath of the barrel.
Appearance. Deep gold to bright amber in color (SRM 6–9); brilliant clarity with a still to very light sparkling character. No head or lacing is present, consistent with traditional barrel-conditioned cider.
Aroma. High intensity of ripe, bittersweet cider apples. Distinct earthy and leather-like wild yeast esters are present. Secondary notes of peat smoke, malted barley, and toasted oak from the Scotch whisky barrels add significant complexity without overpowering the fruit.
Taste. Initial impression is of rich, cooked apple sweetness followed by moderate acidity and firm apple tannins. The flavor profile is elevated by a distinct Scotch whisky character, contributing notes of vanilla and campfire smoke. Finishes medium-dry with a lingering tannic grip and a clean, fruity aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is low to still. A noticeable alcohol warmth provides a pleasant glow, while the cider apple tannins add a moderate, mouth-coating astringency.
