This artisan English Cider showcases the bright, orchard-fresh character of Armagh apples, balanced by a distinctive, refreshingly unique zing derived from a proprietary fermentation process. Appearance. Pale gold to deep yellow (SRM 3–6). Brilliant clarity with no haze. High carbonation typically produces a brief, effervescent white head that dissipates rapidly, leaving little to no lacing.
Aroma. Moderate to high intensity of fresh-pressed apple juice and ripe pomaceous fruit. Subtle floral notes and light honeyed sweetness are present. Clean fermentation profile with very low esters and no significant sulfur or phenolic funk.
Taste. Initial impression of moderate apple sweetness, followed quickly by a bright, refreshing acidity. The flavor is defined by rich Armagh apple character. Hop bitterness is absent; structure is instead provided by low tannin levels and a crisp, tart finish. Balance is slightly sweet but remains highly drinkable and clean.
Mouthfeel. Medium-light body with a sparkling, moderate to high carbonation that prickles the tongue. Very low alcohol warmth at 4.5% ABV. Slight tannin-driven astringency adds a pleasant dryness to the finish.
