This vibrant Wild Specialty Beer presents a striking sensory fusion where the tropical character of Pitaya and the aromatic perfume of Strawberry meet the unexpected creaminess of Banana. It pours with an intense magenta hue derived from the dragonfruit. On the nose, a complex interplay of lactic tartness and subtle wild funk blends with ripe fruit esters. The palate is defined by a bright, acidic snap from the Strawberry and Pitaya, which is expertly balanced by a softening mouthfeel and a rounder fruit weight contributed by the Banana. The wild fermentation ensures a dry, refreshing finish that lingers with a delicate, perfumed fruit acidity.
Appearance. Intense magenta to deep pink hue (SRM 15-20 range from fruit); hazy to opaque clarity. Forms a moderate, pink-tinted head with fair retention and light lacing.
