This Mexican craft interpretation presents a striking sensory profile defined by its rotating fruit character and classic sour-saline balance. The aroma is dominated by the intense fragrance of seasonal fruit, layered over a clean lactic acidity and subtle doughy wheat notes. Appearance. Yellow color (3-4 SRM) with a pronounced, turbid haze. Topped by a moderate to tall white head with tight bubble structure and persistent retention.
Aroma. High intensity seasonal fruit aroma dominates the profile. Supported by a clean, moderate lactic sourness, light bready wheat malt, and a faint, citrusy coriander note. No hop aroma.
Taste. Initial impression is tart and refreshing. Features a medium-low bready malt flavor balanced by a moderate to high seasonal fruit presence. Noticeable but restrained salt character provides a savory edge. Bitterness is very low with no hop flavor. Finishes dry and acidic with a lingering, juicy fruit aftertaste.
