Lo Vilot Garipa is a vibrant Specialty IPA that bridges the gap between a refreshing wheat ale and a bold hop profile. Utilizing a substantial wheat malt base, it offers a soft, bread-like foundation that artfully balances a formidable 80 IBUs. The inclusion of Magnum and Perle hops introduces a refined layer of floral and spicy notes, diverging from the typical citrus-heavy IPA profile. A clean fermentation allows the grainy sweetness of the wheat to remain prominent, while the sharp bitterness provides a crisp, lingering finish. It remains remarkably drinkable despite its high bitterness, presenting a sophisticated and spicy take on the White IPA substyle.
Appearance.3-6 SRM. Pale straw to deep gold in color. Persistent white, creamy head with excellent lacing. Slight haze is expected and appropriate due to the high wheat protein content.
Aroma.Moderate to high hop intensity, featuring prominent floral, spicy, and herbal notes from the Magnum and Perle. Low to moderate bready and grainy malt character from the wheat base. Clean fermentation profile with no significant esters or phenols.
Taste.High hop bitterness is the initial impression, which is firm but supported by a medium-low bready wheat malt flavor. Hop flavors mirror the aroma with assertive floral and spicy characteristics. Clean fermentation profile. The finish is very dry and decidedly bitter, with a lingering, clean spicy hop aftertaste.
Mouthfeel.Medium body with a smooth, slightly creamy texture derived from the wheat. High carbonation provides a crisp, refreshing mouthfeel. Low alcohol warmth with no notable astringency.
