The sensory experience is dominated by intense tropical fruit notes of overripe pineapple, mango, and lychee, derived from the synergy between the wild yeast and a generous dry hopping regimen. Despite its 7.8% ABV, the beer remains remarkably drinkable with a bone-dry finish and a clean, firm bitterness. The Brett character is intentionally restrained, leaning into fruit esters rather than heavy barnyard funk. It is a vibrant, effervescent collaboration between Lo Vilot and La Pirata that emphasizes hop-yeast harmony over acidity.
Appearance.Gold to deep amber (7–10 SRM) with a slight haze from dry hopping and yeast activity. Topped by a dense, ivory-colored head with excellent retention and thick lacing.
Aroma.High intensity of tropical fruit esters including pineapple, papaya, and mango. Significant hop character featuring citrus zest and floral notes. Very low funky complexity with hints of hay and dried grass; no acidic or sour notes present.
Taste.Initial flavors of tropical stone fruit and citrus are immediately followed by a medium-high hop bitterness. The malt profile is light and crackery, providing a subtle base for the peppery and fruity Brett character. It features a bone-dry, highly attenuated finish with a lingering, clean hop bitterness and no harshness.
