Little Earth Project

A vibrant golden Straight Sour Beer that beautifully marries sharp, lactic acidity with the modern complexity of barrel aging and dry hopping. Bright aromas of lemon curd and tart green apple are elevated by the distinctive Simcoe dry hop, bringing forward expressive notes of passionfruit, grapefruit, and a touch of pine. On the palate, a crisp, clean acidity dominates, backed by a subtle, bready malt foundation and delicate whispers of neutral oak. Effervescent and remarkably dry, it finishes with a refreshing, tropical fruit zest that lingers pleasantly.

Appearance. Deep straw to light gold in color (SRM 4-5). Light, billowy white head with poor to moderate retention, leaving minimal lacing. Effervescent with a slight, inviting haze.

Aroma. High intensity. Dominant clean, lactic sourness reminiscent of lemon juice and tart apple, complemented by strong dry-hop aromas of tropical passionfruit, bright grapefruit, and earthy pine from the Simcoe hops. A faint, background note of dry oak and vanilla from barrel aging is present, with very low crackery malt support.

Taste. An immediate, sharp lactic sourness of lemon and green apple is balanced by juicy tropical fruit and citrus flavors of Simcoe hops. Hop bitterness is extremely low, but a resinous, piney hop flavor adds depth. Subtle, dry oak tannins and a hint of vanilla emerge mid-palate. Finishes highly dry and crisp, with a lingering, clean acidity and tropical hop notes.

Mouthfeel. Light to medium-light body with high, bubbly carbonation that enhances the crisp, puckering acidity. Very light warming presence from the 5.2% ABV, with a faint, clean astringency from the wood aging.
