Spellbound is a modern, hazy American Pale Ale that belies its sessionable strength with a remarkably lush sensory profile. The use of Tropical Paradise yeast drives intense biotransformation, yielding a bouquet of ripe stone fruit and tropical esters. On the nose, Nelson Sauvin delivers signature crushed white grape and gooseberry notes, intertwined with the zesty citrus and clementine brightness of Pacific Sunrise. Double dry-hopping with Riwaka adds a distinctive passion fruit and grapefruit edge. Despite the modest alcohol, the mouthfeel is surprisingly creamy and full, finishing with a soft, clean bitterness and a lingering, vine-fruit sweetness that stays vibrant on the palate.
Appearance. Pale straw to light gold (3–5 SRM). Pours with a thick, frothy white head exhibiting excellent retention and dense lacing. Distinctly hazy to opaque.
Aroma. High intensity hop-forward aroma featuring crushed white grape, gooseberry, and pungent passion fruit. Significant tropical esters resembling mango and peach from the specialized yeast. Low, neutral grainy malt sweetness provides a clean backdrop.
Taste. Initial impression is juicy and fruit-driven, led by Nelson Sauvin’s wine-like characteristics and Riwaka’s tropical punch. Pacific Sunrise adds a bright citrus layer of orange peel and lime. Low, cracker-like malt flavor supports the hop profile without adding weight. Bitterness is moderate-low and smooth. The finish is clean with a lingering tropical fruit aftertaste and no harshness.
Mouthfeel. Medium to medium-full body, unusually substantial for its ABV due to high glycerol production. Moderate carbonation with a silky, creamy texture. No alcohol warmth or hop astringency.
