This American Pale Ale presents as a vibrant, modern session beer, leaning into a bright and refreshing sensory profile. A low-gravity base allows the hop character to shine, delivering high-intensity notes of tropical mango, zesty grapefruit, and soft floral undertones. The malt presence is intentionally restrained, offering a delicate, cracker-like foundation that supports rather than competes with the aromatic hop oils. Appearance. Pale straw to light gold (3–5 SRM). Moderate white head with good retention and light lacing. Hazy to opaque, consistent with a modern hazy interpretation.

Aroma. Moderately high hop aroma featuring pronounced tropical fruit (pineapple, passion fruit) and citrus (lemon peel). Low grainy-sweet maltiness provides a neutral backdrop. Clean fermentation profile with very low fruity esters.

Taste. Initial impression of bright citrus and stone fruit. Malt flavor is low and neutral, reminiscent of fresh white bread. This single-hopped Mosaic pale ale is designed specifically for cask. We used a classic malt bill of mostly Best Ale Malt with a good portion of Extra Pale malt. We then whirlpool 5kg Mosaic for a subtle bitterness and a fruity aroma. Finally, we dry-hopped with 10kg Mosaic BBC. All be it quite restrained hopping for us, this beer punches well above its weight. Now brewed with a fresh wet yeast pitch giving more juicy yeast esters and fresher flavour!
