This complex hybrid pours with a vibrant character, marrying the tart elegance of Schaarbeekse cherries with the crisp acidity of Danish cider. The sensory experience is defined by a sophisticated interplay between the funk of the 2018 Coolship base beer and the tannic structure provided by a year in the foeder. Notes of wild cherry, green apple skins, and a subtle earthy funk dominate the palate, leading to a bone-dry, effervescent finish. The collaboration between Æblerov and Lindheim creates a bright, vinous profile that celebrates the harvest of Gvarv with refreshing, sharp complexity and a lingering fruity tartness.
Appearance. Deep reddish-pink to ruby hue (20-25 SRM); hazy to slightly opaque. Dense, pink-tinted head with moderate retention and light lacing.
Aroma. High intensity. Sharp, acidic Schaarbeekse cherries provide a bright, tart top note. Beneath the fruit is a distinct earthy funk consisting of hay and leathery notes from the spontaneous fermentation. Green apple, light acetic notes, and subtle vanillin oak from the foeder aging are present.
Taste. Initial impression is sharp and puckeringly tart. Flavors of sour cherry and tart apple skin dominate the mid-palate. Malt character is nearly non-existent, serving only as a neutral base for the intense fruit and fermentation profile. High acidity is balanced by light oak tannins rather than sweetness. The finish is bone-dry and clean with a lingering, acidic cherry aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation from bottle conditioning. Noticeable but well-integrated alcohol warmth. Lightly astringent and mouth-watering due to fruit skins, oak tannins, and high acidity.
