Appearance. Pale straw to light gold (SRM 2–3). Brilliant clarity with a vigorous, fine-beaded carbonation. Pours with a fleeting white mousse that leaves a delicate ring of tiny bubbles.
Aroma. High intensity of fresh pear; specifically, the floral and honeyed notes of Conference pears and the more complex, earthy-spice hints of the heirloom Grey pears. Clean fermentation profile with very low yeast esters and no detectable sulfur or off-flavors.
