A vibrant and rustic Traditional Perry, this pet-nat showcases the nuanced synergy of heirloom Grey pears alongside Celina and Conference varieties. The sensory profile is defined by a delicate, floral fragrance and the crisp, succulent essence of ripe orchard fruit. Its ancestral method bottling yields a lively, persistent effervescence that lifts the subtle pear skin tannins and soft acidity derived from the 150-year-old trees. Expect a clean, elegant expression of the fruit with a dry, refreshing finish that reflects Lindheim Ølkompani’s focus on authentic orchard character and minimalist fermentation techniques through steel tank processing and natural carbonation.
Appearance.Pale straw to light gold (SRM 2–3). Brilliant clarity with a vigorous, fine-beaded carbonation. Pours with a fleeting white mousse that leaves a delicate ring of tiny bubbles.
Aroma.High intensity of fresh pear; specifically, the floral and honeyed notes of Conference pears and the more complex, earthy-spice hints of the heirloom Grey pears. Clean fermentation profile with very low yeast esters and no detectable sulfur or off-flavors.
Taste.Initial impression is crisp and fruit-forward, featuring layers of sweet pear juice and tart pear skin. The balance is dry to off-dry. Low to moderate acidity provides structure, while very subtle tannins from the older tree fruit add a gentle, sophisticated grip. Finish is clean and highly refreshing with a lingering essence of pear blossom.
Mouthfeel.Medium-light body with a creamy, mousse-like carbonation from the ancestral pet-nat process. No alcohol warmth. Slight, pleasant astringency on the tongue from pear tannins.
