Appearance. Pale straw to light yellow gold (2-4 SRM). Brilliantly clear with no haze. Generally sparkling with a moderate to high level of carbonation; any head is very brief and quickly dissipates into a thin ring.
Aroma. High intensity of elderflower, providing a perfumy, floral, and muscat-like aroma. The apple character is moderate and clean, showing notes of fresh green apple and white grape. No detectable yeast-derived phenols or significant esters beyond the fruit.
Taste. Initial impression is medium-sweet and floral. The elderflower dominates the mid-palate with a delicate, honeyed quality. The Somerset cider base provides a crisp acidity that balances the sweetness. Apple flavor is fresh and pure. Very low tannin presence. The finish is clean and refreshing with a lingering floral aftertaste and no harshness.
Mouthfeel. Light to medium-light body with a crisp, refreshing texture. High carbonation provides a lively tingle on the tongue. No alcohol warmth is perceived at 4% ABV. Smooth and luxurious mouthfeel without being cloying or syrupy.
