This elegant Saison marries rustic Belgian tradition with the vinous depth of Merlot grape must. Two months of maturation in used wine barrels imparts a sophisticated wood character that softens the high attenuation typical of the style. The aromatic profile is rich with citrus and ripe dark fruit, supported by a subtle toffee malt backbone. The fermentation character is equally spicy and fruity, leading to a signature dry finish that remains approachable thanks to the vinous influence. It beautifully honors the vineyard with a complex interplay of peppery yeast, dark fruit, and a smooth, tannin-inflected structure.
Appearance.Deep amber to copper in color (12-14 SRM) with slight red tints from the grapes. Topped by a dense, rocky, off-white head with excellent retention and significant Belgian lacing. Unfiltered with a characteristic slight haze.
Aroma.Moderate-high intensity featuring a complex blend of peppery phenols and fruity esters reminiscent of orange zest and ripe plums. A distinct vinous character brings notes of red grape skins and subtle toasted oak. Grainy malt is present with a light toffee-like sweetness.
Taste.Initial impression of spicy yeast and dark fruit. Low to medium grainy malt sweetness is balanced by moderate hop bitterness and the light tartness of Merlot grapes. Notes of citrus peel and ripe berries mingle with earthy wood. The finish is very dry and effervescent with a lingering spicy, slightly tannic aftertaste.
Mouthfeel.Medium body, slightly more substantial than a standard version due to the barrel aging. High carbonation creates a prickly, effervescent sensation. Noticeable but well-integrated alcohol warmth with a light wood-derived astringency.
