Rustic Day is a refreshing, session-strength Saison, specifically a Grisette, that captures a farmhouse spirit with rustic simplicity. Brewed with Pilsner and Wheat malts, it presents a delicate, grainy foundation with a soft, bready texture. The use of Mistral d'Alsace hops imparts a refined floral bouquet with hints of melon and white grape, harmonizing with the expressive Farmhouse yeast that contributes notes of cracked black pepper and pome fruit. Highly attenuated and effervescent, this beer offers a bone-dry finish and a crisp, moderate bitterness that ensures maximum drinkability for any time of day.
Appearance. Pale straw to light gold. Features a dense, rocky, long-lasting white head with excellent lacing. Slight to moderate haze is present due to the high wheat content and lack of filtration.
Aroma. Moderate to high intensity. Dominated by fruity-spicy yeast esters suggesting pear and citrus, with a distinct peppery phenolic edge. The hops provide a sophisticated floral and fruity (grape-like) character. Low grainy-sweet malt aroma from the pilsner base.
Taste. Initial grainy-sweetness from the pilsner and wheat malts quickly yields to a complex interplay of spicy yeast and floral hop flavors. Bitterness is moderate but feels firm due to the extremely high attenuation and very dry finish. Notes of citrus peel and subtle stone fruit linger into a clean, spicy aftertaste.
Mouthfeel. Light body with a soft, slightly creamy texture from the wheat. Very high carbonation creates an effervescent, prickly sensation on the tongue. No detectable alcohol warmth.
