Chardon is an imposing Imperial Stout that commands attention with its double-mash density and eight-month maturation in Islay Whisky barrels. The sensory journey begins with an intense marriage of dark chocolate, charred espresso, and rich molasses. These deep roasted tones are pierced by the distinctive Islay signature: evocative wisps of peat smoke, medicinal brine, and earthy seaweed. A luxurious, chewy texture coats the palate, supported by a gentle carbonation that lifts notes of dried figs and black currants. The finish is exceptionally long and spirituous, offering a sophisticated warmth that melds scorched grain with charred oak and lingering whisky character.

Appearance. Jet black and completely opaque (40+ SRM). Crowned by a dense, persistent deep tan head that leaves thick lacing and oily legs on the glass, indicative of its high viscosity and alcohol content.

Aroma. High intensity and profoundly complex. Dominant aromas of bittersweet chocolate, roasted coffee beans, and black licorice are layered with the unmistakable Islay barrel character of smoky peat, iodine, and toasted oak. Subtle dark fruit esters of prune and dried fig provide a vinous depth, while a clean, spirituous warmth rounds out the bouquet.

Taste. Massive and multi-layered. Initial impressions of sweet, bready malt and molasses are quickly followed by aggressive roasted flavors of espresso and burnt grain. The mid-palate reveals the Islay influence through earthy smoke, sea salt, and charred wood. Bitterness is medium-high, derived from both hops and dark grains, providing balance to the residual sweetness. The finish is long and warming with a lingering aftertaste of peated whisky and dark chocolate.

Mouthfeel. Very full-bodied, chewy, and viscous with a velvety, mouth-coating texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present but integrated, providing a pleasant glow without being harsh or solventy.
