Aurore is a vibrant interpretation of a Berliner Weisse, elevated by the addition of raspberry and bell pepper. It pours with a soft, hazy pink hue and a brief, frothy head. The aroma is dominated by sharp lactic sourness and fresh, tart raspberries, layered over a subtle savory vegetal note from the poivron. On the palate, the clean acidity of the base beer interlocks with the berry tartness, supported by a doughy, raw wheat malt backbone. The finish is bone-dry and highly effervescent, leaving a delicate, peppery spice and lingering fruit skin character. It is a refreshing, light-bodied ale where the savory pepper provides an intriguing counterpoint to the bright framboise.
