This collaboration Saison presents a complex, rustic grain bill featuring Pilsen, Munich II, and Vienna malts, augmented by the textured additions of wheat, spelt, and rye. The aroma is highly expressive, led by the citrusy zing of Verbena berries and the unique woody and minty nuances of Madagascar wild pepper. Classic continental hops—Saaz, Magnum, and Strisselspalt—provide a floral and spicy foundation that complements the peppery yeast phenols. On the palate, the beer is bone-dry and effervescent, balancing moderate bitterness with a vibrant, herbaceous finish where minty spice and citrus zest linger against a backdrop of grainy complexity.
Appearance.Deep gold to pale orange (7-10 SRM). Hazy clarity due to wheat, spelt, and rye proteins, topped with a dense, rocky white head showing excellent retention and Belgian lacing.
Aroma.High intensity. Fruity esters of citrus and pome fruit are elevated by Verbena berries. Distinctive spicy phenols are joined by woody and minty notes from Madagascar wild pepper. Hop character is moderate, displaying spicy and floral notes from Saaz and Strisselspalt. Malt is lightly grainy.
Taste.Initial impression is highly attenuated and refreshing. Grainy malt flavors from Pilsen and Munich II are low, while fruity esters and spicy phenols are medium-high. The Madagascar pepper adds a cool minty and woody depth, balanced by citrusy Verbena. Hop bitterness from Magnum is moderate and firm. The finish is very dry with a lingering spicy aftertaste.
Mouthfeel.Medium-light body with a slightly silky texture from the spelt and rye. Carbonation is high and effervescent. Alcohol warmth is light and well-integrated. Crisp and highly refreshing.
