This Specialty IPA masterfully bridges the gap between old-world farmhouse character and modern hop intensity. The profile is a complex tapestry of spicy phenols and bright fruit, driven by a blend of Belle Saison and French Saison yeasts. Noble Saaz hops provide a refined floral backdrop, while a double dry-hopping of Elixir and Callista introduces vibrant notes of strawberry and stone fruit. On the palate, a traditional malt base supports a firm bitterness and a characteristically bone-dry finish. Effervescent and rustic yet punchy with hops, it offers a sophisticated balance of peppery spice and contemporary fruitiness.

Appearance. Deep gold to pale amber color; large, frothy white head with excellent retention and lacing; slight haze from yeast and heavy dry-hopping.
