On the palate, the Spelt provides a distinctive depth that balances the soft malt character. Appearance. Light yellow (3-4 SRM) with a creamy, persistent white head that leaves moderate lacing. Generally clear, though a very slight protein haze may be present due to the high spelt content.
Aroma. Moderate to high intensity featuring prominent fruity esters of banana and apple. The malt character is sweet and grainy with a specific nutty, earthy quality derived from the Spelt. Hop aroma is absent, allowing a light spicy phenol character to emerge.
