This sophisticated American Wild Ale showcases the transformative power of a two-year maturation in Italian Vin Santo barrels. A vibrant acidity from the Lervig house mixed culture provides a sharp, clean counterpoint to the opulent layers of honey and sweet dried fruits. Distinctive vinous oak characteristics emerge alongside complex Brettanomyces notes of aged hay and leather. The barrel aging imparts deep nuances of golden raisin and apricot, seamlessly integrated with a sturdy malt backbone. Effervescent and dry, it concludes with a lingering, wine-like finish that highlights the intersection of traditional Italian viticulture and modern craft brewing artistry.
Appearance. Deep gold to copper (10–14 SRM). Pours with a thin, ivory-colored head that dissipates quickly due to high acidity and alcohol. Generally clear to slightly hazy with visible legs on the glass.
Aroma. High intensity and complex. Dominant vinous notes of oxidative dessert wine, dried apricot, and honeyed malt. Secondary aromas of funky Brettanomyces including wet hay and earthy leather, balanced by toasted oak and a bright, tart acidity.
Taste. Initial impression is a sharp, vibrant sourness. Mid-palate reveals rich flavors of golden raisins, dates, and clover honey. The hop bitterness is negligible, allowing the oak tannins and vinous acidity to provide structure. Finishes very dry and crisp with a lingering character of aged wine and stone fruit.
Mouthfeel. Medium-full body with a noticeable warming alcohol presence typical of its 9.5% strength. Moderate carbonation creates a lively prickle on the tongue. Low astringency from the oak barrels.
