This Double IPA delivers a vibrant sensory experience where tropical intensity meets pungent earthiness. The sophisticated hop profile, featuring Cryo Citra, Simcoe, and Nelson Sauvin, provides a brilliant clarity of flavor, oscillating between bright grapefruit, resinous pine, and distinct white grape notes. Despite being gluten-free, the beer maintains a remarkably luscious, thick texture that supports the high-intensity hopping without being cloying. Dank, herbal undertones from the Simcoe are perfectly balanced by the sweet mango and gooseberry character of the Nelson Sauvin and Citra. It finishes with a clean, firm bitterness that emphasizes hop freshness over malt weight.
Appearance. Pours a deep gold to pale orange (SRM 6-8) with a slight, persistent off-white head that leaves moderate lacing. Displays good clarity with only a very faint, soft haze typical of high dry-hopping rates.
Aroma. High intensity hop aroma dominated by tropical fruits (mango, passion fruit) and bright citrus (grapefruit). Distinctive dank, piney, and resinous notes from the Simcoe interplay with a subtle white grape and gooseberry character from the Nelson Sauvin. Malt is low and neutral, providing a clean, grainy backdrop with a very light, fruity fermentation profile.
Taste. A powerful, hop-forward entry featuring grapefruit zest and tropical stone fruit. The mid-palate reveals complex layers of resinous pine and damp earth. Bitterness is firm and moderately high but smooth, avoiding harshness. The malt character is unobtrusive and clean, allowing the Nelson Sauvin's vinous qualities to shine. It finishes medium-dry with a lingering, resinous hop aftertaste and a clean alcohol presence.
Mouthfeel. Medium-full body with a smooth, luscious texture that feels thicker than traditional examples. Carbonation is moderate. Displays a gentle, well-integrated alcohol warmth without any hop-derived astringency.
