This Imperial Stout offers a decadent and complex sensory journey, leaning into its high-gravity foundation. The profile is dominated by deep layers of bittersweet cocoa and rich vanilla, creating a dessert-like indulgence. A distinctive savory-spice character emerges from the addition of cracked black pepper, providing a subtle earthy heat that lingers without overwhelming the palate. Appearance. Jet black and completely opaque (40 SRM). Features a thick, persistent deep tan head with excellent retention and dense lacing. High viscosity is evident in the visible legs.
Aroma. High intensity with bold layers of dark chocolate, cocoa powder, and aromatic vanilla. Supporting roasted notes of espresso and charred grain are complemented by a unique, earthy spice from cracked black pepper. Light dark fruit esters of plum and raisin are present, backed by a smooth, vinous alcohol presence.
Taste. The initial impression is rich and sweet, featuring dominant cocoa and vanilla bean flavors. A mid-palate transition introduces firm roasted bitterness and a subtle savory mineral note from sea salt. The cracked black pepper provides an earthy, spicy depth that builds into a gentle throat warmth. The finish is long and bittersweet, leaving a lingering aftertaste of dark chocolate and spice.
Mouthfeel. Full to very full-bodied with a viscous, chewy, and velvety texture. Carbonation is moderate-low. Alcohol warmth is significant and noticeable but well-integrated, contributing to a luscious and smooth mouthfeel without being sharp.
