On the palate, a rich malt backbone of caramel and biscuit meets a complex vinous acidity and oak tannin from the foudre. Earthy hops provide a sturdy counterpoint to the dark fruit esters, while the medium-full body concludes with a lingering, dry finish reminiscent of fine Italian red wine, balancing malt richness with oak-driven complexity.
Appearance. Deep amber to dark reddish-brown (SRM 15–20). Generally clear with a moderate, light-tan head that displays average retention and slight lacing.
Aroma. Moderate to high intensity. Rich malty-sweetness featuring caramel, toffee, and toasted nuts. Prominent vinous esters of dried cherry and plum from the Brunello foudre aging are complemented by subtle earthy and floral hop notes.
Taste. Initial impression of rich, nutty malt and caramel. Complex dark fruit flavors—raisin and dried cherry—intermingle with oak-derived tannins and a mild wine-like acidity. Hop bitterness is moderate, providing balance without being aggressive. The finish is medium-dry with a lingering touch of toffee and vinous character.
Mouthfeel. Medium-full, chewy body with a smooth, velvety texture. Moderate carbonation. Subtle, well-integrated alcohol warmth is present but not hot.
