Le Trou du Diable

This German Pils captures a rustic, unfiltered charm while maintaining the style’s signature crispness. It opens with an intense cereal-driven malt profile, characterized by fresh dough and toasted cracker notes from high-quality Pilsner malt. The hop presence is assertively herbal and spicy, providing a sharp contrast to the bready core. Despite its unfiltered nature, it remains sparkling and lively on the palate. A firm, clean bitterness develops quickly, leading into a bone-dry, refreshing finish. The result is a balanced yet hop-forward experience that honors traditional lager craftsmanship with a vibrant, lively energy and a persistent, clean aftertaste.

Appearance. Pale gold to deep yellow in color (3-4 SRM). As an unfiltered version, it exhibits a slight, attractive haze. It is topped by a remarkably thick, dense, and long-lasting creamy white head with excellent lacing.

Aroma. Moderate to high intensity of herbal and spicy hop character. This is supported by a rich, grainy-sweet malt backbone reminiscent of fresh-baked bread and light honey. The fermentation profile is exceptionally clean, devoid of fruity esters or diacetyl.

Taste. The initial impression is a flash of grainy malt sweetness that is rapidly overtaken by a sharp, firm hop bitterness. Flavors of dried herbs and floral spice dominate the mid-palate. The balance is decidedly bitter, finishing very dry and crisp with a lingering herbal hop note and a faint mineral quality.

Mouthfeel. Medium-light body with high carbonation that creates a sparkling, crisp sensation. It feels light and refreshing on the tongue without any harshness, though a slight flinty sharpness helps accentuate the dry finish.
