This Imperial Stout presents a commanding sensory profile, further refined by maturation on ebony chips which lends a unique structural depth. The experience is lead by an intense bouquet of freshly roasted coffee and dark chocolate, supported by a foundation of caramelized sugar and rich roasted malt. Its complexity suggests a sophisticated interplay between the assertive bitterness of the roast and a deep, decadent sweetness. The ebony chips contribute a subtle, dry woodiness that tempers the natural richness, resulting in a finish that is both elegantly balanced and warming, embodying the sophisticated power of the style.
Appearance. Jet black and completely opaque (40 SRM). Topped by a dense, persistent, deep tan head with excellent retention. High viscosity is evident as the beer coats the glass.
Aroma. High intensity with a rich, complex blend of espresso and bittersweet dark chocolate. Prominent notes of caramelized sugar and toasty malt provide a sweet base, while low esters suggestive of dried plums or raisins add depth. A faint, clean woodiness from the ebony chips integrates seamlessly with the roast character.
Taste. An initial impression of rich, bittersweet chocolate and intense coffee. The mid-palate reveals deep layers of caramelized sugar and roasted malt. Bitterness is firm and assertive, balancing the significant residual sweetness. The finish is long and warming with a lingering aftertaste of dark cocoa, charred grain, and a touch of woody tannin.
Mouthfeel. Full-bodied and velvety with a luscious, chewy texture. Carbonation is moderate. A gentle, smooth alcohol warmth is present and well-integrated, providing a luxurious, coating sensation without being sharp.
