This barrel-aged Witbier presents a sophisticated evolution of the classic Belgian wheat style. Aged for a year in oak barrels, the traditional foundation of bready unmalted wheat and zesty orange peel is enriched by vinous wood character and a delicate lactic tang. Aromatic coriander and floral esters merge with subtle Brettanomyces funk, offering earthy and leather-like complexity. The palate is refreshingly crisp, balancing the signature lemony spice with a faint tartness from Lactobacillus and dry tannins from the wood. It is a refined, multidimensional ale that bridges the gap between a refreshing wheat beer and a complex wild ale.
Appearance. Pale straw to light gold (3–4 SRM). Significant haze from suspended wheat starch and yeast, appearing milky. Dense, white, moussy head with excellent retention and lacing.
Aroma. High aromatic complexity. Initial notes of zesty orange peel and peppery coriander are followed by bready, grainy wheat. The barrel aging contributes distinct aromas of toasted oak, vanilla, and white wine. Secondary characteristics include a mild lactic tartness and subtle funky notes of hay and leather from Brettanomyces.
Taste. A harmonious blend of grainy, bready malt and bright citrus-orange fruitiness. Lemony coriander provides a spicy mid-palate, while the oak aging introduces vinous complexity and a hint of tannin. Bitterness is low, allowing a light lactic acidity to provide refreshment. The finish is very dry and crisp with lingering notes of spice and wood.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the wheat and oats. Carbonation is high and effervescent, enhancing the refreshing quality. Minimal alcohol warmth; no harshness or astringency despite the wood contact.
