Abricorium is a sophisticated Wild Specialty Beer that masterfully marries a rustic Saison base with the vibrant essence of stone fruits. Fermented entirely with 100% Brettanomyces, it offers a complex, funk-forward profile characterized by leather and farmhouse notes. The addition of apricot and peach introduces a lush, sun-ripened fruitiness that balances the beer’s sharp acidity. A thirteen-month maturation in oak barrels imparts deep vinous qualities and subtle woody tannins, elevating the sensory experience. This pale gold ale presents an invitingly fruity nose and a dry, wood-kissed finish, showcasing a seamless integration of wild fermentation and artisanal barrel aging.
Appearance. SRM 3; pale straw to gold with a slight orange hue from the fruit. Hazy clarity. White head with poor to moderate retention and minimal lacing, typical of acidic wild ales.
Aroma. High intensity aromatics of funky 100% Brettanomyces fermentation, featuring leather, barnyard, and earthy notes. This is layered with bright, fresh apricot and peach fruitiness. Subtle woody oak and vinous, white wine-like scents are evident from the extended barrel aging.
Taste. Initial impression is sharply tart and acidic. Prominent flavors of sun-ripened apricot and peach provide a fruity depth, though the sweetness is fully fermented out. High attenuation leads to a very dry finish. Oak tannins provide a woody structure, while the Brettanomyces character adds complexity through rustic, spicy notes. Moderate vinous qualities linger in the aftertaste.
Mouthfeel. Medium-light body with a crisp, highly attenuated character. High carbonation provides a lively, effervescent scrub. A slight tannic astringency from the oak and fruit skins is present. Very low alcohol warmth.
