Le Ketch Dock 62 - Wakatu, Cascade NZ & Simcoe
Dock 62 is a luminous Hazy IPA that marries the tropical intensity of New England styles with a unique floral lift from honey. The hop profile is driven by the bright lime and zesty citrus of Wakatu and Cascade NZ, grounded by the underlying pine and grapefruit notes of Simcoe. This combination creates a complex bouquet of stone fruit and citrus oil. Despite the addition of honey, the beer maintains a soft, plush body with a restrained bitterness, allowing the fruity esters and hop-derived tropicality to shine. The finish is smooth and off-dry, leaving a lingering impression of honeyed citrus and resinous zest.
Appearance. Straw to light amber (4-6 SRM) with a characteristic opaque haze and a luminous glow. Pours with a dense, rocky, meringue-like white head that shows excellent retention and leaves thick lacing.
Aroma. High intensity hop aroma featuring prominent notes of lime, grapefruit, and tropical stone fruit. A subtle floral honey note weaves through the background, supported by a neutral, grainy malt character and fruity yeast esters of peach and pear.
Taste. High fruity hop flavor mirroring the aroma with lime zest, grapefruit, and soft tropical notes. Low bready malt flavor is complemented by a delicate honey-floral sweetness. Bitterness is low to medium-low, providing just enough balance without harshness. The finish is soft and off-dry with a lingering juicy fruit character.
Mouthfeel. Medium-full body with a soft, silky texture. Moderate carbonation. No astringency or harshness; a very light, well-integrated alcohol warmth is present at the finish.
