Aurora is a refreshing non-alcoholic Straight Sour Beer defined by its vibrant raspberry infusion. The sensory experience begins with a sharp, clean lactic acidity that immediately brightens the palate. Aromas of fresh-picked raspberries dominate, layered over a subtle, crackery pale malt base. Visually, the beer displays a charming pinkish-red hue with a frothy, albeit fleeting, pink-tinted head. The flavor profile is driven by a tart, lemony sourness and juicy red fruit notes, finishing crisp and bone-dry. Its light body and effervescent carbonation make it an exceptionally lively and thirst-quenching Sûre aux framboises without the alcohol.
Appearance. SRM 4–7; pale pink to light rose; slight haze from fruit solids; large, frothy white head with a pink tint and poor retention; highly effervescent.
Aroma. High intensity; sharp, clean lactic sourness is dominant; pronounced fresh raspberry character; low crackery and biscuity malt; no hop aroma; clean fermentation profile without funk.
Taste. Initial impression is a sharp lactic acidity; intense tart raspberry flavor; low bready and grainy malt flavor provides minimal support; hop bitterness is undetectable; no hop flavor; finish is very dry and crisp with a lingering tart fruit aftertaste.
Mouthfeel. Light body; high carbonation; crisp acidity; no alcohol warmth; very clean finish without astringency.
