This vibrant American IPA delivers high drinkability with a dry, modern twist. Brewed with a unique Saccharomyces bruxellensis yeast strain, it yields a rustic, tropical, and lightly spicy orchard fruit profile. An intense hop bill featuring Cascade, Mosaic, and Eureka added during the whirlpool, hop stand, and dry hopping contributes a complex wave of resinous pine, dark berry, and bright grapefruit. It balances a lean, crisp malt backbone with an elegant, lingering bitterness, resulting in an incredibly dry and refreshing finish that dances gracefully on the palate.
Appearance. Pales to a shimmering, light gold color with a slight, persistent haze. Crowned by a dense, rocky, white head with excellent retention that leaves intricate lacing down the glass.
Aroma. High-intensity hop aroma featuring a complex blend of tropical fruit (mango, passion fruit) and citrus (grapefruit, tangerine) from Mosaic and Cascade, alongside a resinous, dank pine note from Eureka. A unique yeast-derived profile of pineapple, ripe pear, and a subtle rustic spiciness from the Saccharomyces bruxellensis yeast complements the hops, supported by a clean, low-intensity crackery malt backbone.
Taste. Vibrant citrus and berry flavors make a strong initial impression, followed closely by a firm hop bitterness. Features layer of tropical fruit, resinous pine, and a touch of white pepper and orchard fruit from the wild-like yeast. The malt flavor is minimal and clean like white bread. The balance is decidedly hop-forward, leading to an extremely dry, crisp, and clean finish with a lingering, pleasant bitterness.
Mouthfeel. Medium-light body with a very smooth, crisp texture and high drinkability. Carbonation is medium-high, enhancing the refreshing character. There is no perceived alcohol warmth or astringency.
