This Imperial Stout presents a decadent sensory profile defined by its intensive aging in Pedro Ximenez barrels and the addition of plums. The aromatics lead with a powerful blend of bittersweet chocolate and espresso, quickly giving way to the rich, vinous character of raisin and molasses provided by the sherry casks. On the palate, the dark fruit intensity of sun-dried plums melds with toasted oak and a deep, charred malt backbone. The high alcohol content is seamlessly integrated, offering a smooth, warming sensation that complements the thick, velvety texture and lingering, sweet-savory finish.
Appearance. SRM 40+. Opaque jet black. Thick, persistent dark tan head with oily lacing and visible legs indicating high viscosity.
Aroma. High intensity. Rich dark chocolate, roasted coffee beans, and black licorice. Strong vinous notes of raisin, fig, and dates from Pedro Ximenez casks, layered with ripe plum and subtle vanilla-scented oak.
Taste. Initial impact of dark cocoa and burnt sugar. Deep layers of plum and prune fruitiness follow. The Pedro Ximenez influence provides a complex mid-palate of molasses and nutty sherry. Moderate to firm bitterness is softened by significant residual sugar. The finish is long and complex with warming alcohol and gentle oak tannins.
Mouthfeel. Full to very full body; viscous, heavy, and chewy. Low carbonation. Noticeable, smooth alcohol warmth. Velvety and luscious texture with minimal astringency.
