Passionista is a vibrant Wild Specialty Beer that centers on the intense, tropical essence of passionfruit. The sensory experience begins with a high-intensity aroma of exotic fruit, blending seamlessly with a bright, lactic tartness. On the palate, the juicy passionfruit character is front and center, supported by a subtle, creamy sweetness from the addition of lactose. This sweetness balances the acidity, creating a rounded, accessible sour profile. Despite its 6.2% alcohol, the beer remains refreshing, finishing with a lingering, tangy fruit note that invites another sip, characteristic of a well-crafted American Wild Ale with fruit.
Appearance. Pours a hazy, golden-orange (5-7 SRM) with a moderate, fine-beaded white head. Retention is fair, typical for a fruited sour, leaving light lacing.
Aroma. High intensity, dominated by fresh, tangy passionfruit and tropical notes of guava and citrus. A clean, sharp lactic acidity provides a bright backdrop, with virtually no hop aroma and a very low, neutral malt profile.
Taste. Initial impression is a burst of tart, juicy passionfruit. The fruit flavor is fresh and exotic, followed by a mid-palate of soft, creamy sweetness from the lactose which tempers the sharp acidity. Low bready malt flavor. Bitterness is very low, as the balance is struck between fruit tartness and residual lactose sweetness. The finish is clean and tangy with a lingering tropical aftertaste.
Mouthfeel. Medium body, feeling slightly fuller than a standard wild ale due to the lactose addition. Carbonation is moderate to high, providing a prickly, refreshing sensation. Low alcohol warmth with a smooth, creamy texture and no significant astringency.
