This massive Imperial Stout presents a decadent sensory profile shaped by its extended rest in ex-bourbon maple syrup barrels. The nose is a rich tapestry of dark chocolate, toasted oak, and a distinct sweetness reminiscent of Grade A maple syrup, layered over deep roasted malt. On the palate, intense flavors of espresso and bittersweet cocoa collide with luscious vanilla and charred oak from the American bourbon barrels. The high alcohol content provides a smooth, integrated warmth that carries the maple character through a lingering, velvety finish. It is a complex, harmonious marriage of wood-aged character and intense roasted depth.
Appearance. Jet black and opaque (40+ SRM). A dense, dark tan head forms with moderate retention, eventually fading to a persistent collar; high viscosity and alcohol levels are evident through prominent legs on the glass.
Aroma. High intensity with a complex blend of bittersweet chocolate, roasted coffee, and black licorice. Distinctive secondary notes of maple syrup, vanilla, and charred oak from the bourbon barrels are prominent, supported by subtle dark fruit esters of plum and raisin and a clean, warming alcohol presence.
Taste. Initial flavors of rich roasted grain and sweet maple syrup lead into a mid-palate of dark chocolate, espresso, and toasted oak. Firm hop bitterness is present but softened by the significant malt body and barrel-derived sweetness. Nuances of vanilla and bourbon-soaked wood add complexity, leading to a long, warming finish with lingering notes of cocoa and roasted malt.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, providing just enough lift to the heavy body. A significant, smooth alcohol warmth is present without being sharp or solventy.
