This Straight Sour Beer presents an elegant sensory profile shaped by its time in Chardonnay barrels. At 7% ABV, it leads with a crisp, clean lactic acidity that evokes tart green apple and bright lemon zest. The barrel influence adds a sophisticated vinous layer, contributing notes of white grape and a whisper of toasted oak. A foundation of crackery pale malt provides a structural base that supports, rather than competes with, the fruity esters of apricot and peach. Highly effervescent and remarkably dry, this beer harmonizes the sharp refreshment of a sour ale with the refined, dry finish of a white wine.

Appearance. Very pale straw (2-3 SRM); features a large, dense white head with relatively poor retention; clarity ranges from clear to a slight haze with visible effervescence.

Aroma. High intensity lactic sourness dominates, accompanied by a moderately fruity character of peach, lemon, and tart apple. Underlying pale malt notes of biscuit and cracker are present, alongside a clean fermentation profile and a subtle vinous oak note from barrel aging.

Taste. Initial impression is a sharp, clean lactic sourness that remains the focal point. Complementary flavors of bready and crackery malt provide a subtle backbone. No hop flavor or bitterness is detected. Palate features citrusy lemon and green apple fruitiness with a hint of white grape.
