Lambiek Fabriek’s Juicy & Wild Rhub‑Elle is a spontaneous-fermented lambic matured in oak barrels, then macerated with about 300 g/L of fresh rhubarb. Blended from lambics aged between 8 months and 2 years, it finishes around 5 % ABV and is bottle-conditioned with natural refermentation.
It pours a pale-to-light pink gold and presents aromas of tart rhubarb, green apple, hay, and a mild barnyard funk. On the palate it’s juicy and crunchy, balancing rhubarb tartness with lambic acidity and subtle oak tannins. Reviews note it’s “mild funk nose, surprisingly thick, barnyard, sweet fruitiness, hay, closing acidity”.
