Round the Twist is a vibrant Wild Specialty Beer that captures the nostalgic essence of a summer ice lolly. This unfiltered sour presents an expressive bouquet where sweet Strawberry leads, followed closely by punchy, tropical Pineapple and a sharp, citrusy Lime zing. The wild fermentation provides a foundational tartness that cuts through the fruit-forward profile, balancing the initial impression of sweetness with a clean, acidic backbone. Each sip is a refreshing vortex of fruit flavors, evoking memories of sun-drenched afternoons. The combination of tangy citrus and luscious red berries creates a complex yet approachable sensory experience that remains refreshing from start to finish.
Appearance. Pours a hazy, pale salmon to pinkish-amber (SRM 5-7). Features a moderate, light pink-tinted head with fair retention and minimal lacing, typical of acidic wild ales.
Aroma. High intensity aromatics of fresh strawberry and ripe, tropical pineapple. A sharp, zesty lime character provides a bright citrus top note, blending with a clean lactic sourness and subtle fruity esters from the wild fermentation. Malt and hop character are absent.
Taste. The initial impression is one of punchy, tart fruit. Sweet strawberry and succulent pineapple flavors are prominent, quickly balanced by a tangy lime acidity. The wild fermentation lends a refreshing sourness that enhances the fruit profile without being overwhelming. The finish is dry and clean with a lingering citrus and berry aftertaste; bitterness is negligible.
Mouthfeel. Medium-light body with moderate to high carbonation that provides an effervescent, prickly sensation. Very low alcohol warmth at 5.5% ABV. A slight, refreshing acidity provides a crisp, mouth-watering quality without harsh astringency.
