Ta Valeur Sûre is a vibrantly refreshing Straight Sour Beer designed for maximum drinkability. Appearance. Very pale straw (2-3 SRM). Features a large, dense, white head with moderate to poor retention typical of acidic styles. Clarity ranges from clear to a slight haze.
Aroma. High intensity of clean lactic sourness and bright tropical fruit. Distinct dry-hop notes of grapefruit, lime, mango, and lychee are prominent. Very low, crackery malt presence provides a neutral backdrop; clean fermentation with no funk.
Taste. Initial impression is a sharp, refreshing lactic tartness. Flavors of underripe peach and citrus pith lead into tropical fruit notes from the hops. Hop bitterness is undetectable. Malt character is minimal, resembling white bread crust or crackers. Finish is dry and crisp with a lingering lemony tang.
