La Mule Voit Double is a punchy, assertive Double IPA that prioritizes a vibrant hop expression over malt complexity. Pouring a deep gold with a persistent off-white head, it immediately releases an intense bouquet of ripe tropical fruits and distinct pine resin. The palate is defined by its frenetic hopping, delivering layers of citrus and stone fruit balanced by a lean, neutral malt backbone. At 8% alcohol, it maintains remarkable drinkability, finishing remarkably dry with a long, resinous bitterness that lingers. This profile captures the essence of the style: powerful, aromatic, and decisively bitter without being heavy.
Appearance. Deep gold to light orange-copper (8-12 SRM); moderate-sized, persistent off-white head with good lacing; clear to slightly hazy.
Aroma. High intensity hop aroma featuring prominent notes of tropical fruit, citrus, and a sharp, resinous pine character; background malt is clean and neutral with a slight grainy sweetness; fermentation is largely neutral with very low fruity esters.
Taste. Initial hop-forward impact with high bitterness; flavors of resinous pine, citrus peel, and mixed tropical fruits dominate. The malt flavor is low and unobtrusive, providing a soft, clean base. Finishes dry to medium-dry with a very long, lingering bitter aftertaste of hop oils and resin; alcohol is clean and integrated.
