La Superbe UDARE presents a sophisticated evolution of the Gose, layering succulent ripe pears and organic Liberian cacao over a traditional tart wheat base. The aroma leads with juicy pome fruit and a delicate lactic tang, transitioning into a palate where sweet, fleshy pear meets the crisp acidity typical of the style. The addition of Sel de Guérande provides a mouthwatering salinity that rounds out the medium body, while the finish introduces a subtle, complex bitterness from the cacao. It is a refreshing yet decadent interpretation, balancing fruit sweetness with a clean, mineral-driven dry finish.
Appearance. Yellow to pale gold (3-4 SRM) with a moderate haze from the fruit and wheat. Renders a moderate white head with tight bubbles and fair retention; highly effervescent.
Aroma. Moderate to high intensity featuring prominent ripe pear and sweet pome fruit. Soft doughy wheat malt underpins a clean lactic sourness. Subtle earthy, dark cocoa notes are present without being chocolatey. No hop aroma; light mineral salinity.
Taste. Initial impression of sweet, juicy pear followed by a medium-low lactic tartness. Bready wheat malt provides a soft foundation. The Sel de Guérande provides a noticeable but balanced salt character that enhances the fruitiness. Very low hop bitterness, though the finish features a sophisticated, lingering bitter cacao character. Dry and crisp aftertaste.
Mouthfeel. Medium body, slightly fuller than a standard example due to the 6% ABV. High carbonation with a prickly, effervescent sensation. The salt provides a mouthwatering, tingly quality; very light, well-integrated alcohol warmth.
